I looked up the Thetford Aqua-Magic II and was able to find out it uses 1/2" NPT fittings therefore you can easily install a shut-off valve like the Valterra Single Hose Shut-Off Valve part # A01-0125VP directly behind the toilet with a couple adapters. These adapters can be obtained locally, you'll need one to go from a 1/2" NPT to 3/8" NPT and another to go from 3/8" NPT to 1/2" NPT. You most likely either have a water line shut off valve for that specific line somewhere that's been turned off or the you could have a bad water valve cartridge. I would first start by making sure that there isn't a leak anywhere on the water heater that would tell the system to keep heating up water. If you've confirmed that there isn't a leak anywhere on the system, you'll next want to check and make sure that the thermostat is up to the tank and making contact on the clear plastic spot; it could be a simple bad connection like this that is keeping the thermostat from reading the correct water temperature.

The trickle you get out of the head is in fact to avoid too much pressure to the hose and fittings going to the shower head from the main hot and cold knobs. When the water is turned off at the knobs the water will not trickle from the head and shouldn't unless one or both of the knobs is not completely closing off the water flow. The Phoenix Faucets RV Kitchen Faucet # PF211326 has a 1/2" inlet shank and would use a typical kitchen faucet supply hose, which you could get from your local hardware store to connect to your copper water line and to the faucet. You can lubricate the valve by dumping some vegetable oil in and working the valve open and closed. If you can take off your valve without it being a huge hassle or have your valve is right at the opening I recommend using some water resistant silicone lubricant WD40 spray.
